Das Verfahren <\/h1><\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

<\/p>

Ziel ist die Einrichtung f\u00fcr eine verbesserte Hefeern\u00e4hrung, eine Erh\u00f6hung der Geschmacksstabilit\u00e4t von Bieren und anderen g\u00e4rungsbasierten Produkten und eine gezielte Einflussnahme auf deren Aromazusammensetzung. <\/span><\/p>

Die Erfindung betrifft eine Einrichtung (Einheit), <\/span>welche geeignet ist die Hefeern\u00e4hrung bei der Verg\u00e4rung von W\u00fcrze, hergestellt aus Malz, Malzersatzstoffen (Rohfrucht, Reis, Mais etc.) oder auch anderen zuckerhaltigen Rohstoffen, z.B. Trauben zu verbessern und somit jegliche alkoholische G\u00e4rung zu optimieren. Bei hohen Gehalten an Fetts\u00e4uren (bei sehr tr\u00fcben W\u00fcrzen) wird eine ausreichende Hefevermehrung \u00fcber das hohe Angebot an Fetts\u00e4uren in der W\u00fcrze erreicht. Dadurch wird das volumenm\u00e4\u00dfige Bel\u00fcften der W\u00fcrze beim Anstellen erheblich reduziert. <\/span><\/p>

Durch die volumenm\u00e4\u00dfige Reduzierung der W\u00fcrzebel\u00fcftung erfolgt auch entsprechend eine geringere Kontaktzeit von Sauerstoff und W\u00fcrze, was dadurch eine geringere Oxidation der W\u00fcrze bewirkt und somit eine bessere Geschmacksstabilit\u00e4t der fertigen Biere erreich wird.<\/span><\/p>

Dies bedeutet,\u00a0 <\/span>dass durch eine Steuerung\u00a0 <\/span>des Gehaltes an Fetts\u00e4uren\u00a0 <\/span>in der W\u00fcrze vor und w\u00e4hrend der G\u00e4rung\u00a0 <\/span>auch das Aromaprofil eines Bieres beeinflusst wird. <\/span><\/p>

Diese Einrichtung gestattet es, die Hefeern\u00e4hrung entscheidend zu optimieren und somit die Produkteigenschaften, zum Beispiel Schaum und Geschmacksstabilit\u00e4t, zu verbessern, andererseits einen Einfluss zu nehmen auf das gew\u00fcnschte Aromaprofil von Bieren. Dies gilt auch f\u00fcr Wein und andere Produkte, welche auf einer G\u00e4rung basieren.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t
